Jade Distillation at the Combier Distillery
Spent this morning at the Combier distilery in Saumur, where Ted Breaux distills the Jade absinthes. The historic still-room was designed by Gustave Eiffel - the distinctive metalwork of his studio is immediately apparent in the girders and railings that support the cooling apparatus for the 10 stills. There are eight circa 1870 Egrot stills, and two 1100 litre Renaud stills bought in the early 1900’s from Pernod Fils.

I’ve been reading about the Combier Distillery and will be in Anjou at the beginning of August. Does the distillery have regular hours and do you know if Ted is usually there? It would be wonderful to be able to learn a bit more about the history and process. Glad to have stumbled onto your site, great photographs!
